Poliphonia is Pheasant’s Tears’ distinctive field-blend wine, co-fermented from an experimental plot in the Tibaani vineyard planted with 117 recognised indigenous Georgian grape varieties, with dozens more still being researched. The name references Georgian polyphonic singing, many voices sounding as one.
Like the rest of the range, Poliphonia is made in the natural qvevri tradition with biodynamic farming and minimal intervention. It represents the winery’s mission to preserve and revive Georgia’s ancient grape diversity.
