Poliphonia is a natural-wine restaurant, bar and wine shop in the Mtatsminda district of Tbilisi, created by vintner John Wurdeman. Set in a vaulted cellar space, it is built around a curated list of living Georgian natural wines served by the glass and by the bottle.
The kitchen follows a seasonal, ever-changing menu of local, organic and often plant-forward dishes designed to pair with the wines. Georgian and European wines by the glass, locally made chacha and Svia craft beer brewed in Kakheti round out the drinks list.
